Ok, so I know these brownies might sound a little odd but I promise they are delicious! Black bean brownies are nothing new but I decided to jazz them up with sweet summer (well, end of summer) raspberries and a little pinch of chipotle chile powder. It’s a perfect balance of sweet and spicy.

When I first thought about doing this recipe I was just going to leave the recipe at the edition of raspberries but then the chipotle bug bit me. I swear people, I cannot get smokey southwest flavors out of my brain. If I had my way I would add smoked paprika/chipotle chile powder/green chiles to almost anything. Ok, maybe no green chiles in desserts BUT smoked paprika and chipotle chile powder (obvi) are totally cool in dessert.

You know what else is pretty awesome about this recipe? The use of the food processor. I swear I don’t give that appliance enough love. It’s so amazingly wonderful that it and can make everything from hummus to pie dough. Basically it’s capable of taking black beans and pureeing them so smoothly that they can be used as brownie batter. That is pretty kick ass in my opinion.

If you have never had black bean brownies before I should note I find this recipe to be very fudgy and and only slightly sweet. Those are my favorite types of brownies but it’s just a warning to all you cake brownie lovers out there.

I also experimented in this brownie recipe by using the new Truvia brown sugar blend. It gives you the same texture as traditional brown sugar with 75% fewer calories!

Raspberry Chipotle Black Bean Brownies

Yield: 8x8 pan

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Ingredients:

1 (15 ounce) can black beans, drained and rinsed
1/2 cup cocoa powder
1/4 cup almond meal
1/4 cup Truvia brown sugar blend
2 large eggs
2 tablespoons extra virgin olive oil
1-1/2 teaspoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon chipotle chile powder
1/4 teaspoon kosher salt
6 ounces fresh raspberries
1/3 cup dark chocolate chips

Directions:

Preheat oven to 350 degrees and line a 8x8 baking dish with parchment paper, set aside.

In the bowl of a food processor add black beans, cocoa powder, almond meal, Truvia brown sugar blend, eggs, olive oil, baking powder, vanilla extract, chipotle chile powder and kosher salt. Blend until smooth.

Pour mixture into a bowl and stir in fresh raspberries and dark chocolate chips.

Add batter to prepared baking dish. Bake for 35 minutes and cool completely before cutting.
