Tomato Ricotta Toast

This tomato ricotta toast is my favorite way to start the day. Crunchy toasted whole wheat sourdough spread with creamy ricotta cheese and topped with sun-ripened tomatoes, kosher salt, and black pepper.

Who knew that the summer of 2021 would be the summer of tomato ricotta toast?

I made this recipe in 2018 because I have been eating ricotta toast FOR YEARS. After all, it’s so delicious and the perfect way to use summer tomatoes.

The key to this breakfast (or delicious snack!) is fresh sourdough bread, good quality ricotta, fresh summer tomatoes, kosher salt, and freshly cracked black pepper. I also really like to add some fresh basil leaves if I happen to have them on hand.

Check out your store’s cheese section to see if they offer freshly made ricotta cheese instead of the pre-packaged stuff in the dairy aisle. The taste and texture are fresher and will make this toast shine.

I also like to use whole wheat sourdough bread for this toast, but honestly, any crusty bread will work well here.

Ricotta toast is one of the best and easiest summer breakfast recipes!

The best store-bought ricotta cheese

Ricotta cheese can typically be found in the dairy case or near the fresh cheese section in most grocery stores.

I personally prefer the stuff you will find in the cheese section versus the dairy section because it oftentimes tastes fresher and contains fewer preservatives. I think this results in a ricotta cheese that tastes super fresh and is super creamy.

Fresh ricotta cheese is usually found in a metal tin, covered in plastic, and sealed with a rubber band.

If you can’t find any fresh ricotta cheese my second choice is Calabro which can be found in a plastic container in the dairy section. My second choice would be Sorrento but it’s not nearly as good as Calabro.

If you’re looking for a dairy-free ricotta cheese Kite Hill makes a very delicious version that can be found at some higher-end grocery stores such as Whole Foods.

What tomatoes are best for ricotta toast?

As you can see in the photos I like to take fresh summer tomatoes, slice them up, and pile them on high!

However, if you’re looking for something a little different you can also use on the vine roasted tomatoes or add cherry tomatoes to a pan with hot oil and give them a quick blister to help soften the tomatoes.

If you’re looking for the best summer tomatoes my personal favorite is Cherokee purple heirloom tomato. I can find these at most farm and tomato stands.

When should I eat ricotta toast?

I really enjoy it as a nice summer breakfast but it also makes a great midday snack.

Ingredients

  • 2 pieces whole wheat sourdough bread
  • 4 tablespoons ricotta cheese
  • 2-3 vine-ripened tomatoes thinly sliced
  • Kosher salt to taste
  • Black pepper to taste
  • Fresh basil leaves optional

Instructions

  • Toast bread and spread each slice with 2 tablespoons of ricotta cheese.
  • Top with sliced tomatoes and desired amount of kosher salt and black pepper.
  • If desired add basil leaves.
