Salted Caramel Treats

These sweet and chewy salted caramel treats are your new best friend… 

Christmas is the time of the year where I find it completely acceptable to sit around and eat nothing but sweets. I try to squeeze in green vegetable now and again but the sweets are overtaking my house.  However there is a downside. There are really only so many sweets one person can eat. Plus, my husband seems to lack a raging sweet tooth. I’m just not sure how he can go through life never craving sweets. How is this possible?

In the meantime I’m hoping something can send help…maybe in the form of hungry teenagers with high metabolism? They seem to love sweets.  {Maybe Rebecca will lend her boys?}

Now, you might have noticed I haven’t posted a lot of holiday goodies this year but it doesn’t mean I’m not making them! If you follow me on SheKnows you will see that I’m basically pumping out holiday treats like an assembly line. However, today I made a treat just for you. These crunchy little balls treats are sweet, chewy and perfect for your holiday Christmas platter.

 A few weeks ago I was sent a few bags of Popchips and asked to create something delicious. Popchips come in 14 different flavors {including original and BBQ} but I was most excited about their new special edition salted caramel flavor and limited holiday pack sweet potato. Two of my most favorite things ever. Plus their snacks are naturally gluten free and a healthier alternative to sugary or fried snacks.

So what did I do with my Popchips? Well I made a sweet treat of course! What could be more delicious than salted caramel PopChips, sweet potato PopChips and marshmallows mixed together? Oh and then drizzled with chocolate.  Nothing. Obviously. Once you throw in melted marshmallow I’m all over the sweetness train. If you’re feeling really fancy you could try dipping the whole treat in chocolate.  I see nothing wrong with that either.

Sweetness overload.

Salted caramel PopChip treats

Yield: 14-20 balls depending on size

Prep Time: 10 min

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

1 (3.5 ounce) bag salted caramel PopChips corn chips
1 (3 ounce) bag sweet potato PopChips
2 cups Rice Krispie treats
6 tablespoons unsalted butter
1 (10.5 ounce) bag mini-marshmallows
Dark chocolate, melted

Directions:

While the PopChips are in the bag crush them into crumbs. Add to a measuring cup. You should have about 4 cups of crushed PopChips. Add in another 2 cups (or less) Rice Krispies until you have a total of 6 cups of crunchy filling.

In a large non-stick skillet melt butter and add in mini-marshmallows. Cook until the marshmallows melt and you have creamy mixture.

Pour in PopChips/Rice Krispie mixture and stir to combine.

Let the mixture cool for about 2 minutes and then starts forming balls. Scoop out 2 tablespoons of the mixture and roll into a ball. Place onto a silpat or parchment lined baking sheet.

Drizzle the tops with chocolate and let the chocolate cool before devouring.
