Today I have a delicious recipe and a recipe video. Good lord me on a camera. Let me just say I have been nervous about posting this video for almost a week now. In the end I think it turned out pretty decent and I was rewarded with stuffed mushrooms at the end. I sorta wish all scary experiences ended with stuffed mushrooms. How cool would that be?

Sausage and Spinach Stuffed Mushrooms

These sausage and spinach stuffed mushrooms are perfect for any holiday party or easy weeknight meal. So easy to make and ready in under and hour.

Yield: About 15 mushrooms

Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Ingredients:

  • 1 pound spicy Italian sausage
  • 1 small yellow onion, chopped
  • 8 ounces cream cheese, room temperature
  • 1/2 cup finely chopped fresh baby spinach
  • 1 cup shredded cheese, divided
  • 15 large mushroom caps, cleaned

Directions:

Preheat oven to 375 degrees.

In a large skillet brown sausage and onion, drain.

In a large bowl add sausage and onion mixture. Stir in cream cheese, spinach and 1/2 cup shredded cheese.

Stuff mushroom caps with filling, add to a large casserole dish and sprinkle with remaining shredded cheese.

Bake for about 15-20 minutes until the filling is warm and the cheese on top is browned.

Enjoy by eating them all and not sharing.
