Happy Tuesday! I’m here today to bring you a new and trendy way to start the day – hummus toast!

But, I got even fancier than just plain old hummus toast. I gave you a big flavorful bite – shakshuka hummus toast. So. Much. Goodness.

Not only is this hummus toast packed full of flavor it’s 100% on trend. I’m not sure if you’re following the food trends of the 2019 but I assure you hummus toast and plant heavy diets are floating to the top.

That means if you love veggies this is the year for you!

Ok, I promise to post more than hummus toast but you all know I love me some Sabra and I’m all about spreading that love.

Why hummus toast?

Why not?! But really, it’s because it’s packed full of protein and the perfect blank slate to create anything you want for breakfast.

Seriously. How good would hummus toast topped with apple taste? Or maybe topped with roasted vegetables? Or even sardines.

Ok, maybe not sardines.

Well, at least for me.

I’m pretty sure my 7-year-old niece would devour it though. She is obsessed with canned sardines and herring


Why shakshuka hummus toast?

This shakshuka hummus toast was born out of an idea I had to roast thickly sliced tomatoes with ras el hanout. If you’re not familiar with ras el hanout it’s a very popular spice blend in North African cooking.

Its smell is intoxicating and it’s a HUGE favorite in my house. I have used it on meat and vegetables both and can’t stop won’t stop using it.

It’s fairly easy to find online but you should also be able to find it at any spice store, gourmet market and surprisingly World Market.

That’s not a paid mention for World Market. I just got mine from there so it’s a helpful hint.

I know most of you know I’ve been working with Sabra for years. They are one of my favorite clients and my husband loves seeing our fridge full of hummus.

When they asked me if I would team up to help spread the word about hummus toast I was all over it!

Who doesn’t want to make fun toast?

I had a ton of ideas of what would be good on top on hummus toast (did you see my lemon poppyseed hummus toast on Instagram?) but ultimately I went with shakshuka inspired because who doesn’t love all thing shakshuka?

Tomatoes – good

Eggs – good

Feta cheese – good

Did anyone just read that in Joey’s voice from FRIENDS?

A few years ago I made feta chickpea shakshuka that was tomato and egg perfection so I knew that those flavors on toast would be magnificent.

This was a full on breakfast meal for my husband who asked me if I would mind making it for him next week too. Um, yes. Yes, I can.

Art usually grabs breakfast at the IBM cafeteria but it’s time that we cut down on that cost and start eating breakfast at home.

Insert hummus toast.

Insert deliciousness.

Insert saving money.

It’s a win/win.

Oh, and can we talk about that runny egg? Isn’t it so dreamy?

I could not wait to pop into that sucker and watch it drip down the toast. So good.

I also sprinkled the top of the toast with some black sesame seeds and some merken which is a Chilean spice made from goat’s horn chile. It’s so damn good.

Shakshuka Hummus Toast

This shakshuka hummus toast is a healthy and hearty way to start the day. Ras el hanout roasted tomatoes served on top of hummus toast with a fried egg, fresh cilantro, and tangy feta cheese. You'll love this savory breakfast dish!


  • 1 large beefsteak tomato
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh cracked black pepper
  • 1 teaspoon ras el hanout spice blend
  • 2 thick slices whole wheat bread
  • 4 tablespoons Sabra original hummus
  • 1 tablespoon olive oil
  • 2 large eggs
  • Minced cilantro, for topping
  • Crumbled feta cheese, for topping
  • Black sesame seeds, for topping
  • Crushed red pepper, for topping


  1. Preheat oven to 425 degrees.
  2. Slice the tomato into 4 thick slices. Place on a small baking sheet and sprinkle both sides with kosher salt, black pepper, and ras el hanout.
  3. Add the tomatoes to the preheated oven and bake for about 10 minutes or until the tomatoes are slightly soft and fragrant.
  4. While the tomatoes roast, toast your bread and spread 2 tablespoons of Sabra original hummus on each slice of the bread.
  5. Add 2 roasted tomato slices to each slice of bread.
  6. In a small skillet add olive oil and place over medium-high heat. Fry both eggs until the desired doneness.
  7. Add the egg to the toast and garnish with minced cilantro, crumbled feta cheese, black sesame seeds, and crushed red pepper.
  8. Season with extra kosher salt or black pepper if needed.
