Shaved Brussels Sprout Apple Bacon Salad

This shaved Brussels sprout apple bacon salad is the perfect combo of sweet, salty and savory. Roasted and shaved Brussels sprouts combined with bacon, candied pecans, sliced apples and pomegranates seeds all drizzled with a simple maple vinaigrette.

I’ve never been one to ever give up meat but I would happily live off mostly salads for the rest of my life. Now I know I said “mostly” and that is only because at some point I know a giant steak would call my name. I simply can’t stop won’t stop when it comes to my love for steak.

However, we’re not really talking about steak today and that’s ok. Because I’m bringing you the most delicious salad EVER! It basically screams fall and includes a few of my favorite thing – Brussels sprouts, pomegranate seeds, SweeTango® apples, praline pecans, bacon and a homemade maple vinaigrette. Also I’m now singing Sound of Music in my head but changing the lyrics to my salad ingredients. I should probably not write a post this early in the morning.

I know a lot of people still aren’t sold on the deliciousness of Brussels sprouts and that’s ok. But to be fair I’m here to change to your mind. Yes, when overcooked Brussels sprouts become funky and not so delicious – I will give you that. BUT this salad is so far from overcooked it’s just down right tasty. The freshly roasted and shaved Brussels sprouts will give you that nice green crunch you look for in a salad and then it all comes together when you bite into that delicious (and majorly) crunchy SweeTango apple. I talked a little bit about SweeTango apples last week in my Tangy Apple Slaw Corned Beef Reuben post. They are a delicious mix of Honeycrisp and Zestar! and they are beyond delicious. I’m not lying when I say I ate the majority of them right from the bowl BUT I did manage to save a few for this salad. They bring a nice balance of sweet to a salad that has a lot of savory flavors

going on.

PLUS it should be important to note that the apples stay crisp. There is nothing worse than a mealy apple. Am I right?

Then to top this salad off I went ahead and threw in fresh pomegranate seeds, SUPER crispy bacon and candied pecans. This salad is like crunchiest most fall salad you will have this season. I actually ended up eating it for lunch but I think it would make a great addition to your Thanksgiving spread or even an easy weeknight main course.

Shaved Brussels Sprout Apple Bacon Salad

This shaved Brussels sprout apple bacon salad is the perfect combo of sweet, salty and savory. Roasted and shaved Brussels sprouts combined with bacon, candied pecans, sliced apples and pomegranates seeds all drizzled with a simple maple vinaigrette.

Ingredients:

For salad:

  • 4 cups shaved Brussels sprouts
  • 2 tablespoons olive oil
  • Kosher salt and pepper, to taste
  • 1 SweeTango apple, thinly sliced
  • 1 cup fresh pomegranate arils
  • 1 cup chopped crispy bacon
  • 1/2 cup chopped praline pecans

For maple vinaigrette:

  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 2 teaspoons Dijon mustard
  • Kosher salt and pepper, to taste
  • 2/3 cup olive oil

Directions:

For salad:
Preheat oven to 400 degrees and line a rimmed baking sheet with a silpat liner or parchment paper.

Add shaved Brussels sprouts onto prepared baking dish, drizzle with olive oil and season with kosher salt and pepper. Toss to combine.

Spread out Brussels sprouts and roast for a bout 10-15 minutes or until slightly soft and they just start to brown. Remove from the oven and let cool to room temperature.

When they are cool add to a large salad bowl and top with sliced apples, pomegranate arils, crispy bacon and candied pecans.

Drizzle with desired amount of vinaigrette and toss to evenly coat.

For maple vinaigrette:
In a small mixing bowl add apple cider vinegar, maple syrup, Dijon mustard, kosher salt and pepper. Whisk to combine.

While whisking slowly pour in olive oil until the vinaigrette is thick and combined. Taste and season with more kosher salt and pepper if needed.
