This past couple of years I have fallen hard for sheet pan meals. They are so easy to throw together and everything you need is just cooked right up on sheet pan. How. Stinking. Easy. Naturally, when I was asked to work along with BRIANNAS Salad Dressing I jumped at the chance. I’m an actual user and lover of their dressings and I knew they would make for an awesome meal ingredient.

While I typically use their dressings as a dressing I went a bit beyond its typical use for this recipe. I wanted to take ALL the flavor from their Zesty French Dressing and turn into a mealtime superstar.

Well, I like to think I totally accomplished that with this dish. It’s the perfect combination of buttery yellow baby potatoes, artichoke hearts, and late summer vine-ripened tomatoes. Oh, and of course some chicken thighs because a sheet pan meal isn’t complete without a little protein.

Plus you all know I’m obsessed with the deliciousness that is chicken thighs.

And, as cheesy as this sounds I’m sitting in a coffee shop writing this post, sipping on a pumpkin spice flavored latte, listening to 90’s country on Pandora and I’m in 100% fall mode. I’m ready for scarves, boots and super low humidity so I can wear my hair down without feeling gross.

The reasons I say this is because this sheet pan french dressing chicken thigh dinner is early fall appropriate too. It’s comforting, hearty and even though it features tomatoes they are still in season!

Yes, I know we are all “OMG PUMPKIN” but don’t skip over the end of tomato season. They are about to be gone and then you’ll regret you didn’t indulge in a summer tomato when you’re stuck eating a winter tomato.

So gross.

Oh, and if you’re thinking that this French dressing is the French dressing of your youth you stop that right now! This isn’t that bright orange stuff that just tasted like “French dressing” but you could never pinpoint any actual flavor, NOPE.

This baby is a combination of apple cider vinegar, onion, garlic, red and green peppers and just a touch of paprika and mustard. It’s perfectly savory and perfect on top of salads and of course this chicken. Plus it’s gluten free, nut free, vegetarian, HFCS free and ONLY 4 carbs per serving. So for you macro counters (me included), you can totally enjoy this dressing.

And I’ll have you know this was not an easy decision to pick which dressing to use. They sent me their Zesty French, Dijon Honey Mustard and Chunky Blue Cheese and every single one is delicious. Ultimately I decided on the Zesty French because I could not pass up an opportunity to make and share this chicken with you all!

Sheet Pan French Dressing Chicken Thigh Dinner

This sheet pan French dressing chicken thigh dinner is the perfect combination of Zesty French dressing tossed with baby potatoes, artichoke hearts and vine-ripened tomatoes. You’ll love how easy it to throw together and how delicious it tastes!

Yield: 4-6 servings

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 60 minutes

Ingredients:

  • 1/2 cup BRIANNAS Zesty French Dressing
  • 1 tablespoon fresh thyme leaves
  • 1 lemon, zested
  • Black pepper, to taste
  • Kosher salt, to taste
  • 4-6 bone in skin on chicken thighs
  • 1 pound baby yellow potatoes, halved
  • 1 (14 ounce) can artichoke hearts, drained
  • 1/2 pound cherry tomatoes

Directions:

Preheat your oven to 375 degrees and line a large rimmed baking sheet with a Silpat liner if you have one. If not, you can either leave it plain or line with foil if desired, set aside.

In a large bowl whisk together BRIANNAS Zesty French Dressing, fresh thyme leaves, lemon zest, black pepper and kosher salt. Add in chicken, toss, shake off any additional dressing (you want it to just coat the chicken not be dripping from the chicken) and add to your prepared sheet pan.

In the same bowl with the dressing add the potatoes and artichokes. Toss to combine and add the potatoes and artichokes to the pan, surrounding the chicken.

Bake for about 40 minutes, remove, scatter on the tomatoes and add back to the oven and cook for about 10 minutes longer or just until the tomatoes are just beginning to burst.

Serve hot with additional dressing if desired.
