Spiced Pork Chops with Charred Poblano Apple Salsa

These spiced pork chops with charred poblano apple salsa are the perfect cold weather meal and ready in just 30 minutes. The pork chops are quickly pan fried and served over easy mashed sweet potatoes and topped with an addictive charred poblano apple salsa.

Total Time: 30 minutes

Ingredients:

For salsa: 

  • 2 green scallions
  • 1 poblano pepper, cut in half, seeds and stem removed
  • Olive oil
  • Kosher salt, to taste
  • 1 granny smith apple, cored and cut into 1/2 inch squares
  • 1 tablespoon minced cilantro
  • 1/2 lime

For pork:

  • 2 boneless center-cut pork chops
  • 1 teaspoon ancho chile powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chipotle chile powder (add more if you like spice)
  • 1/2 teaspoon ground coriander
  • Kosher salt, to taste

For sweet potatoes:

  • 2 small sized sweet potatoes (about 1/2 pound)
  • 2 tablespoons butter
  • Whole milk (or any non-dairy milk of your choice) - optional
  • Kosher salt and pepper, to taste

Directions:

For salsa:
Preheat oven to 475 degrees.

Thinly slice green ends of the scallion and set aside. Slice off the root of the scallion and save the remaining white half, you should have about a 2.5-3 inch piece left. On a small baking sheet add halved poblano pepper and white part of the scallion. Drizzle with a small amount of olive oil and season with desired amount of kosher salt.

Roast for about 10 minutes or until the pepper and onion are slightly soft and charred. Once fully cooked remove and let cool.

Once they are cooled dice into small pieces and add to a small mixing bowl. Add in scallion greens, diced apple, cilantro and lime juice. Stir to combine add in a small drizzle of olive oil and season with desired amount of kosher salt. Set aside until ready to use.

For pork chops:
In a small skillet set over medium heat add 2 teaspoons of olive oil.

Place pork chops onto a plate and in a small bowl mix together ancho chile powder, cumin, chipotle chile powder and ground coriander. Rub the spice mixture all over the pork chops and season with desired amount of kosher salt.

Add pork chops to the hot skillet and cook for about 2-4 minutes per side or until browned and medium on the inside. Remove from skillet and let rest.

For sweet potatoes:
Peel sweet potatoes, and cut into 1 inch cubes. Place into a medium sized pot and cover with cold water. Add to a burner set on high and boil until the potatoes are just soft. Drain and place back into the skillet. Add in butter and mash until smooth. If the potatoes are too thick simply thin out with milk. Season with desired amount of kosher salt and pepper.

For serving:
Divide sweet potatoes between 2 plates, top the sweet potatoes with pork chops and desired amount of salsa.
