Spicy Peanut Butter Chicken Wings

Wings are totally my jam. I seriously cannot get enough of these little flavor packed gems. However, my one deep confession is that I have never fried my chicken wings. I always go with the grill or the oven. Why fry when you can get that super crispy skin without the smell of grease? Don’t get me wrong – I’ll fry. I’ll fry with the best of them. BUT if I don’t have to deal with the smell I’m all for that too.

There is no amount of Febreeze that gets fryer smell out of a house. Especially in the middle of winter when I can’t open the windows for fresh air. I mean I could open the windows I just don’t think it would be wise.

You know, winter.

These wings are of the baked variety {which makes them even better for you!} and then tossed in a simple peanut butter sauce that has been spiked with just a drop (or more like dollop) of sriracha. I added a little more than the recipe calls for but that is only because I’m on a “everything must burn my mouth OMG I love hot things” kick right now. It’s really up to you how much you want to add.

*When baking my wings I use a rimmed baking sheet with a cooling rack set inside pan. I use this Chicago Metallic set that comes with a perfectly fitting cooling rack.

Spicy Peanut Butter Chicken Wings

Yield: 2-4 servings

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 60 minutes

Ingredients:

  • 3 pounds chicken wings
  • 2/3 cup smooth natural peanut butter, stirred
  • 1/4 cup hot water
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon sriracha (more if desired)
  • 1-2 teaspoons Truvia brown sugar blend (or 1 tablespoon honey)
  • 1 teaspoon grated ginger
  • 1/2 teaspoon grated garlic
  • 1/2 teaspoon grated lemongrass
  • 1/3 cup chopped peanuts
  • 3 green onions, sliced green part only

Directions:

Preheat oven to 425 degrees and add a cooling rack to a rimmed baking sheet.

Open chicken wings and bloat the skin with a paper towel. Place the chicken wings onto the cooling rack (that is sitting inside the baking sheet) in an even layer.

Bake for 45 minutes or until the wings are crispy and fully cooked. Flip the wings over half way through baking.

Right before the wings are done cooking start putting together your sauce.

In a large bowl whisk together peanut butter and hot water until smooth. Whisk in vinegar, sriracha, Truvia, ginger, garlic and lemongrass.

Add the hot wings to the peanut sauce and toss to evenly coat. Sprinkle the wings with chopped peanuts and green onions.
