These summer squash pancakes with creamy goat cheese dressing are the perfect addition to your summer menu. I like to serve these as an appetizer but when served with salad they make a fantastic summer meal. Trust me, if you love summer squash and goat cheese this dish is for you!

Today I’m bringing you an awesome summer squash pancake recipe (with creamy goat cheese dressing!!!!) over at Rachel Cooks! I also realized I don’t make enough pancakes around here. I could only find one recipe in my whole collection! Granted, it was an amazing recipe (Lemon Ricotta Pancakes with Blueberry Sauce) BUT it’s no excuse. I need to get on this pancakes making bandwagon. It can only bring more deliciousness to my life.
Am I right?
Also, can we talk about how amazing pancakes are in general? I feel like every week should just be pancakes week. Let’s make this a thing!
Also, I decided to make a savory pancake because who doesn’t love a pancake for dinner? This way you can feel less guilty about eating syrup soaked pancakes and instead cover them in creamy goat cheese dressing – it’s a win-win!

Summer Squash Pancakes with Creamy Goat Cheese Dressing
These summer squash pancakes with creamy goat cheese dressing are the perfect addition to your summer menu. I like to serve these as an appetizer but when served with salad they make a fantastic summer meal. Trust me, if you love summer squash and goat cheese this dish is for you!

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Ingredients:
For squash pancakes:
- 8 ounces shredded summer squash (zucchini & yellow squash)
- 1 tablespoon finely chopped shallots
- 1 large egg, beaten
- 3-4 tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh cracked pepper
- 1/2 teaspoon Italian seasoning
- Vegetable oil
For goat cheese dressing:
- 2 ounces fresh creamy goat cheese
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon champagne vinegar
- 3 teaspoons water
- 1/2 teaspoon lemon zest
- Salt and pepper to taste
Directions:
For pancakes:
Using a food processor shred your squash. Add squash to a large bowl and add shallots, egg, flour baking powder and spices.
Heat vegetable oil over medium heat and drop batter into oil and fry until crispy on both sides.
Top with goat cheese dressing and serve with salad and hot capicola.
*Note: If you notice the batter start to get runny just add a little more flour. The longer the batter sits the more water the squash will give off.
For goat cheese dressing:
In a blender combine all ingredients and blend until creamy.

These look delicious. For the dressing, I don’t have creamy goat cheese, but I have some goat cheese crumbled feta. I’m wondering if I could make the equivalent by combing the goat feta and some non-fat plain Greek yogurt?
