So, I’ve talked before about how I’m a bad breakfast eater but I have been slowly working to change that. You know they say it is the most important meal of the day. However, you know what else I’m sort of not that great at? Eating lunch. I’m one of those people who gets busy and totally forgets how to function. I work, work, work until I realize “OMG I’m starving. OMG, there is nothing to eat. OMG, I’m going to die. OMG, why did I spend my last hours on earth working?!”

Ok, that’s a tad dramatic but my life is sometimes like that. I’m just not that great at adulating myself. I mean I was a great nanny and I never forgot to feed my charges so there is always that. I just can’t seem to remember to actually feed myself #adulting

Also, I say this as I’m about to turn 35 years old in a few months. When exactly when I become a “real” adult? Is this something that will happen when I wake up and I’m 35 or do I have to have kids for this to happen? Report back. I’m looking forward to a life of being a real adult where I pay bills, remember to change my oil, feed myself, don’t put off housework and actually remember to take the wet clothes out of the washing machine and put them into the dryer. I’m pretty sure my husband would really love if I could get that last one down too.

Now, on the rare occasion I get my act together I’m all “Hey Brandy! Go make lunch for yourself you silly goose” I’m always conflicted, do I cook something? Do I make something “no cook” or do I just reheat leftovers? Well, if you’re ever in the same boat as I am stop worrying. I got this whole thing covered. TRUST ME!

I paired up again with my favorite tuna brand Genova. Last time we worked together I brought the totally delicious pesto tuna baguette sandwich to the blog and this time I’m bringing this awesome looking tuna white bean herb salad. Which I ate on toasted bread and also just straight from the bowl. I’m so classy.

Now, as you can see Genova came out with something pretty nifty – easy open cans! (They come in albacore AND yellowfin!) This is actually pretty exciting to me because I seriously just broke my can opener. You guys, do you know how often you need that little thing? The answer is a lot. I’m seriously priming that to my house the second I’m done writing this post. Of course, I don’t work in an office BUT if I did this would be a crazy blessing. Want to know why – because I could sit at my desk and make this delicious tuna salad! I mean of course if your office has a kitchen you should maybe do it in there BUT I’m just saying you could do it at your desk. No need for special kitchen equipment when you can pop this can open, stir in the ingredients and DEVOUR!

Oh and there is no mayo in this tuna salad. It’s light and bright with tons of fresh lemon, herbs and just a touch of olive oil from the tuna. I also threw in some white beans for a delicious little Italian twist.

Tuna White Bean Herb Salad

  • 1 can Genova albacore tuna, drained
  • 1 (14 ounce) can cannellini beans, drained and rinsed
  • 1/2 lemon, zested
  • 1/2 lemon, juiced
  • 1/4 cup small diced red onion
  • 2 tablespoons minced fresh dill
  • 2 tablespoons minced fresh parsley
  • Kosher salt, to taste
  • Black pepper, to taste
  • Toasted bread, optional


In a bowl add all the ingredients and lightly stir to combine. Taste the mixture and add more herbs, lemon or seasoning if needed.

Serve on bread if desired.

Note: This recipe is highly customizable so you can always add more herbs, lemon or even a few drizzles of extra olive oil.
