Vanilla Spiced Apples

These sweet vanilla spiced apples are perfect served on top of ice cream, pancakes, or French toast. Ready in under 30 minutes and such a great use for all those fall apples. 


If there is one thing I love it’s smothering my ice cream in warm vanilla spiced apples.

I also love smothering my pancakes and French toast in these lovely little apples. They are so easy to make and PACKED with vanilla bean paste.

Of course, you can use fresh vanilla bean pulp instead of paste but I find the paste to be the easiest to use.

If you haven’t gotten on the vanilla bean paste train I suggest you pack your bags and get on board STAT.

I mean who doesn’t love apples mixed with vanilla bean paste, brown sugar, and just a pinch of kosher salt. So perfectly sweet.

I actually made these apples and put them on the blog in 2011 but the pictures were so sad I had to redo them for this year. Also, I have a lot of new readers since 2011 and it’s important that all my posts get some loving.

Actually, it’s my plan this year to redo a lot of my old posts to promote some of my old work.

No sense in making new stuff and forgetting about my old stuff.

Now for my original set of pictures, I served this over French toast but this time around I opted to serve this over vanilla ice cream.

I mean, it’s ice cream. Who doesn’t love that?

The recipe is super simple and ready in under 30 minutes. I like to eat them warm but they are equally delicious room temperature or even cold.

Oh, and don’t be alarmed by the large amount of water you add to the recipe. Because it’s mixed with cornstarch it helps the apple cook until they’re soft all while cooking down until thick and luxurious.

Is it acceptable to want to swim in a bowl of vanilla spice apples? Cause I do.

Vanilla Spiced Apples

Yield: 2 cups
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Sweet vanilla spiced apples are perfect served on top of ice cream, pancakes or French toast. They are a sweet way to start or end your day.


  • 3 tablespoons unsalted butter
  • 4 apples, peeled, cored, and sliced into wedges
  • 1/2 cup dark brown sugar
  • 1 tablespoon vanilla bean paste
  • Pinch of kosher salt
  • 1-1/2 cups cold water
  • 1 tablespoon cornstarch


  1. Add butter to a large skillet and melt over medium heat.
  2. Once butter is melted add apple slices and cook for 5 minutes to soften apples.
  3. Add brown sugar, vanilla bean paste, kosher salt, and stir to combine.
  4. In a mixing glass whisk together the cold water and cornstarch and pour into the apple mixture.
  5. Continue to cook over medium heat until apples are soft, about 15 minutes.
  6. When apples are soft you can turn up the heat to quickly thicken the syrup.
  7. The apples and syrup will be ready once it reaches a maple syrup consistency.
