Ok, I know I have been going overboard with the salads lately and I SWEAR this one is worth it. However, soon everything with pumpkin and apples so until that time happens I’m eating all the salads. Plus, who can resist a salad made with watermelon? Sweet and juicy and perfect for lunch or a simple side dish.

To be honest I made this salad, took a few pictures and then ate the WHOLE THING for lunch. Just me. In the kitchen. Devouring this salad like a woman who hadn’t seen food in weeks. So good. So worth it.

Plus I love this watermelon Greek salad recipe because it’s just a fun way to use watermelon. Normally in the summer I just slice watermelon up, sprinkle it with salt and devour. However, sometimes it’s fun to do something a little different. This salad is a little different and a whole lotta delicious.

And the whole watermelon and feta combo is super rad. Yes, I just used the word rad. I’m taking this blog all the way back to the late 80’s. That time in my life when I was a little kid and my only summertime worries was what flavor of Kool-Aid to make (I LOVED Great Bluedini) and whether or not my brother would let me snag the remote so I could watch a little The World of David the Gnome. If you never had the pleasure of watching that show you need to look it up on YouTube. It has gnomes that give each other Eskimo kisses and they ride on a fox throughout the forest. They are living their best gnome life.

Watermelon Greek Salad

This watermelon Greek salad is a refreshing take on the classic Greek salad. Full of sweet watermelon, red onions, cucumbers, olives, feta cheese and lots of fresh herbs. You'll love this simple summer salad!

Ingredients:

  • 4 cups cubed watermelon
  • 2 cups cubed cucumbers
  • 1-1/2 cups cubed feta cheese
  • 1/2 cup whole kalamata olives
  • 1/4 cup minced fresh parsley
  • 1/4 cup minced fresh mint
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Kosher salt, to taste
  • Black pepper, to taste

Directions:

In a large bowl add cubed watermelon, cucumbers, feta cheese, kalamata olives, parsley, mint and red onion.

In a small bowl whisk together olive oil and red wine vinegar. Pour over the watermelon mixture and stir to combine.

Taste the salad and season with the desired amount of kosher salt and black pepper.
