Baked Blueberry Oatmeal

This wholesome baked blueberry oatmeal is filled with rolled oats, blueberries, maple syrup, and bananas. It's perfect for a large family breakfast or as a delicious make-ahead and re-heat breakfast option!

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups milk
  • 1 large egg
  • 1/3 cup maple syrup
  • 1 tablespoon unsalted butter melted
  • 2 teaspoons vanilla paste or extract
  • 2 ripe bananas cut into 1/2 inch slices
  • 1-1/2 cup blueberries

Instructions

  • Preheat oven 375 degrees F and spray an 8x8 pan with non-stick cooking spray.
  • In a medium bowl mix together oats, ground cinnamon, baking powder, and kosher salt, set aside.
  • In another bowl beat together milk, maple syrup, egg, melted butter, and vanilla bean paste.
  • Take your prepared baking dish and cover the bottom with banana slices. Then sprinkle 3/4 cup blueberries over top bananas.
  • Add oats to the dish and gently pour milk mixture over oats.
  • Gently rap pan on the counter to make sure the milk has gone all the way through the oats.
  • Sprinkle the top with blueberries and cook in the oven for 35 to 45 minutes until the top is golden brown and the oatmeal is set.
  • If desired, drizzle the top with more maple syrup.
