1 tablespoon olive oil 1 pound ground chicken 5 green onions thinly sliced 1 tablespoon grated lemongrass 1 tablespoon grated ginger 1 tablespoon grated garlic 1 tablespoon chili garlic sauce 1/2 lime juiced 3 tablespoons soy sauce 2 tablespoons rice wine vinegar 1 tablespoon fish sauce 2 teaspoons dark brown sugar 1/4 cup minced cilantro 2 tablespoons minced mint 1 head bibb lettuce outer leaves carefully removed, washed and pat dry 1/4 cup minced peanuts
In a large 12-inch skillet add olive oil and set over medium-high heat.
Once the oil is hot add the ground chicken and cook for about 5 minutes to start browning the meat all while breaking up the meat with a spatula.
Add in the green onions, grated lemongrass, grated ginger, grated garlic, and chili garlic sauce.
Continue cooking until the meat no longer looks pink.
In a small bowl whisk together lime juice, soy sauce, rice wine vinegar, fish sauce, and dark brown sugar.
Pour into the meat mixture, stir to combine and cook just the mixture has thickened slightly.
Remove from the heat and stir in the cilantro and mint.
Place out your bibb lettuce leaves and fill each leaf with some of the ground chicken mixtures.
Sprinkle the top with minced peanuts.
