Blueberry Mojito

This deliciously sweet blueberry mojito is just what summer needs! Freshly muddled blueberries combined with a mint simple syrup, white rum, lime juice, and a touch of fizzy soda water.

Ingredients

sprigs of mint
1/3
cup
of fresh blueberries
1
ounce
mint simple syrup
1
ounce
lime juice
freshly squeezed
2
ounces
white rum
Club soda
Ice
Instructions
Place mint leaves at the bottom of your highball glass.
Add in the blueberries,
mint simple syrup
, and lime juice.
Use a muddler to gently crush to release mint oils and blueberry juice.
Add in the rum and mix with a bar spoon.
Fill the glass almost to the top with ice and club soda.
For garnish use extra blueberries, a mint sprig, or lime wedges. Serve immediately.
Notes
If you don’t want pieces of blueberry in your drink you can mash them in another bowl and strain the juice out of the berries.
