During the summer I crave salad like it’s my job. I’ll even eat it for breakfast if I’m feeling especially lazy. The great thing about salad is that it’s easy to throw together and you can empty the fridge in the process. Throw on a little leftover meat, maybe some grilled veggies, fresh summer fruit – you get the point. PLUS it’s a great way to squeeze in some vegetables to your breakfast.
Albeit a little unconventional. And maybe weird if you’re a breakfast purist.
This salad ranks in the top of great salads because it’s salty, peppery and sweet. Hello, perfect combination! I actually LOVE arugula as a salad base because I’m all about that peppery bite. Plus it lasts longer than mixed greens which always seem to go bad before I can eat them all. Is there some way to save greens so they don’t mushy so quickly? I need to know!

Ingredients:
For dressing:
- 1/2 cup fresh blackberries, mashed
- 2 tablespoon aged balsamic vinegar
- 1 teaspoon olive oil
- Kosher salt and pepper, to taste
For salad:
- 2 teaspoons olive oil
- 1 cup Jones Dairy Farm Ham Steaks, diced small
- 1 pound baby arugula
- 1 cup fresh blackberries
- 3/4 cup crumbled blue cheese
