Chorizo Cotija Guacamole Toast

This chorizo cotija guacamole toast is a great way to start the day OR a delicious mid-day treat. Savory guacamole mixed with fresh vegetables and topped with spicy chorizo, salty cotija and a sprinkling of cilantro. You’re going to go crazy over this delicious toast!

Ok, I know that avocado toast is all the rage and I’m hands down a fan. BUT I think I just found something else that might float my boat just a teeeeeeeeny bit more. Guacamole toast. Yep, guacamole toast. This toast isn’t just plain old avocado this toast is guacamole PACKED with lots of southwest flavors because I used up a little Sabra Veggie Fusions South-Western. Which is basically guac packed with 7 different varieties of fresh vegetables. In this case those veggies inlcude corn, black beans and even poblano peppers. Yeah, totall digging it. Oh and this goodness is 30% less calories than regular guac which is always a good thing.

Soooooo long story short – this guacamole toast is the BEST way to get your veggies in early on in the day. Also, this guac is making me write EVERYTHING in CAPS. Sorry guys. I’m not really yelling at you. I just really love this toast.

Now, I wasn’t just going to top my toast with guacamole. I wanted even more deliciousness because I’m no fool and I love my toast loaded! Sooooooo I took my toast and piled on browned spicy chorizo, crumbled cotija cheese and a sprinkling of cilantro. Of course, I decided to go a little heavy on the cilantro but then again I’m a total cilantro freak.

Ohhhhhhh and because the chorizo wasn’t spicy enough I also sprinkled on crushed red pepper. Gotta get that heart pumping with spicy food early in the morning!

Chorizo Cotija Guacamole Toast

This chorizo cotija guacamole toast is a great way to start the day OR a delicious mid-day treat. Savory guacamole mixed with fresh vegetables and topped with spicy chorizo, salty cotija and a sprinkling of cilantro. You're going to go crazy over this delicious toast!

Yield: 2-4 servings

Prep Time: 5 minutes

Cook Time: 10 minute

Total Time: 15 minutes

Ingredients:

  • 1 pound ground fresh chorizo
  • 4 large slices of bread
  • 1 (7 ounce) package Veggie Fusions Southwestern
  • Cotija cheese, crumbled
  • Minced cilantro

Directions:

In a medium sized skillet brown chorizo until crispy. Remove from the skillet and set aside.

Toast the bread, spread with Veggie Fusions Southwestern, top with browned chorizo, desired amount of cotija cheese and minced cilantro.
