Cranberry Mojito {Boozy Days of Christmas}

This cranberry mojito is the perfect way to celebrate Christmas. Full of fresh cranberry simple syrup, fresh mint, lime and just a touch of rum.

The thing I love most about this drink is the color. Seriously. Let’s take a look at this drink. It’s pretty freaking gorgeous. Plus it combines cranberry and mint. It’s a big giant glass of cold delicious christmas spirit. See what I did there?

Now, as always you should drink in moderation. Unless you have a designated driver. Then you can drink it up! Well, you should stop drinking when your cannot feel your teeth anymore. It’s a great natural way of your body telling you “hey you, stop drinking or you will totally regret it tomorrow.” I don’t want anyone waking up and regret drinking this the night before. I want them to wake up, think lovingly of their night before and then figure out when it’s a socially acceptable time of the day to make another one. Cheers!!!

Cranberry Mojito

This cranberry mojito is the perfect way to celebrate Christmas. Full of fresh cranberry simple syrup, fresh mint, lime and just a touch of rum.

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients:

For cranberry simple syrup:

  • 8 ounces fresh cranberries
  • 1 cup sugar
  • 1 cup water

For each drink: 

  • 10 mint leaves
  • 1 tablespoon lime juice
  • 2 ounces cranberry simple syrup
  • 2 ounces rum
  • Seltzer water

Directions:

In a medium sizes sauce pot add fresh cranberries, sugar and water. Add to medium heat and let mixture simmer for about 10 minutes. You do not want the mixture to boil or the cranberries to burst. After all the sugar is incorporated and the mixture takes on a pink hue, take it off the burner and let it cool to room temperature.

Once cranberry simple syrup is cool it's time to make the drink!

In a tall glass add mint leaves and lime juice. Muddle slightly to release all the delicious mint flavor. Fill glass with ice and add in 2 ounces cranberry simple syrup and 2 ounces rum. Top with seltzer water and add some fresh cranberries for garnish.

Note: This recipe will make about 1 cup simple syrup which is enough to make 4 drinks.
