Dark Chocolate Yogurt Brownies

These dark chocolate yogurt brownies are packed full of dark chocolate flavor and a hint of tangy yogurt. Made with white whole wheat flour, coconut palm sugar and ready from start to finish in just 35 minutes. 

Let’s talk about my current obsessions – Soda Stream, old seasons of Top Chef, 30 Rock, and The Bachelor. Totally random, right? Let’s break this down:

Soda Stream – it makes fizzy water. How is that ever a bad thing? Plus it helps me drink almost 6 liters of water a day so I’m feeling crazy hydrated.

Top Chef – right after Christmas all the seasons of TC went on sale and my hubs and I bought 4 seasons. So far we have watched 3.5 out of 4 and I’m already disappointed that we didn’t’ buy all the seasons. Plus watching people make fancy is always inspiring.

30 Rock – I still love me some Liz Lemon. This will never stop.

The Bachelor – Squeeee it’s January so that means it’s time fake love, stabby women and lots of shots of one random man showering outdoors. If you also love The Bachelor make sure we are following each other on Twitter because I live tweet that ‘ish every single Monday night.

Know what else I’m obsessed with? Trying new recipes by subbing in ingredients I’m not used to typically using. For example – these brownies. Now, I’m totally used to making brownies but I was determined to make them totally different this time by throwing in yogurt.

Normally when I make brownies I opt to make a recipe that is super fudgy and covered in frosting (hello peanut butter frosted Nutella brownies!) but these brownies have a different texture. A little bit cakey but full of big chocolate flavor. I also added a little espresso powder to bump up the chocolate flavor and sprinkled the top with sea salt because why not?

Even though the brownies were big on the chocolate flavor they still had a nice flavor from the yogurt which you could actually detect. I also used palm sugar so the recipe was a little less sweet than a typical brownie. I guess you could say I made a sorta healthy-ish brownie – white whole wheat flour, coconut palm sugar, yogurt and dark chocolate. Totally healthy.

Dark Chocolate Yogurt Brownies

These dark chocolate yogurt brownies are packed full of rich chocolate flavor and a hint of tangy yogurt flavor. Top with flaked sea salt and powdered sugar.

Yield: 8x8 pan

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup chopped dark chocolate
  • 6 tablespoons unsalted butter, cut into small pieces
  • 1 cup coconut palm sugar
  • 1 cup vanilla bean yogurt
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • 1/2 cup semisweet chocolate morsels
  • 1 teaspoon flaked sea salt
  • Powder sugar, optional

Directions:

Preheat oven to 350 degrees and line an 8x8 pan with parchment paper or spray with non-stick spray, set aside.

In a small bowl whisk together flour, baking soda and kosher salt, set aside.

In a medium sized mixing bowl add chopped dark chocolate and unsalted butter. Melt in 20 second increments in the microwave until just melted. Make sure to stir the chocolate each time you stop the microwave.

Once the chocolate is melted stir in palm sugar, yogurt, cocoa powder and espresso powder. Once combined stir in flour mixture and chocolate morsels.

Pour brownie batter (it will be thick) into the prepare dish and smooth out the top.

Bake for about 25 minutes until a toothpick comes out clean when tested in the center.

Let cool and sprinkle the top with optional powder sugar.
