Flat Iron Steak with Balsamic Roasted Radicchio

This flat iron steak with balsamic roasted radicchio is the perfect flavorful weeknight meal. Steak, radicchio, balsamic vinegar and blue cheese – how can you go wrong?

Do you know those people who don’t eat red meat?

Yeah, I don’t get it.

I know the world is all about eating white meat but good grief do I love me the red stuff. Especially if it’s rare – yeah I’m one of those people.

However, you know what really sets me off? People who take a delicious steak and smother it in ketchup or steak sauce. Why would you do this?!

Listen, I’m a firm believer in the whole “eyes on your own plate” movement but I cannot help giving a side glance when I see the whole ketchup/steak sauce smothering.

I feel like those two condiments were made for covering up questionable taste. So unless you were served steak on an airplane I see no reason you should ever smother it anything but a dab of butter and sprinkling of salt.

I kid you not I once saw a man order an $80 steak at a steak house and then as for steak sauce.

Sigh.

Here is the thing though, I will still love you if you confess you smother your steak in sauce.

I just can’t get behind your choice, that’s all.

Luckily this steak requires ZERO sauce. Trust me! This is one of those all in one messy plate meals.

I’m not sure that is a real meal category but it works in my household. It’s a simple flat iron steak topped with balsamic roasted radicchio and served over arugula.

For added deliciousness, I also sprinkled on just a little blue cheese. Who doesn’t love blue cheese?

Flat Iron Steak with Balsamic Roasted Radicchio

This flat iron steak with balsamic roasted radicchio is the perfect flavorful weeknight meal. Steak, radicchio, balsamic vinegar and blue cheese - how can you go wrong?

Prep Time: 15 minutes

Cook Time: 15 minutes per batch

Total Time: 30 minutes

Ingredients:

  • 2 (8 ounce) flat iron steaks
  • Kosher salt and pepper
  • 1/3 cup balsamic vinegar
  • 2 garlic cloves, minced
  • 1 shallot, minced
  • 1 green onions, sliced
  • 1 large sprig rosemary, minced
  • 1 head radicchio, quartered
  • 1 tablespoon olive oil
  • 2 cups baby arugula
  • 1/2 cup crumbled blue cheese

Directions:

Lay out steaks and season with kosher salt and pepper, set aside.

In a medium sized mixing bowl whisk together balsamic vinegar, garlic cloves, shallot, green onion and rosemary. Add in quartered radicchio and toss to coat. Let the radicchio sit and marinade for at least 10 minutes.

While the radicchio is marinading start pre-heating your oven to 375 degrees. Place marinaded radicchio to a parchment lined baking sheet and add to the oven. Let roast for about 8 minutes until the radicchio is soft.

While the radicchio is roasting start cooking your steak. Add 1 tablespoon olive oil to a large pan set over medium high heat.

Once the oil is hot add the steaks and quickly cook on each side until you have reached desired doneness. Depening on thickness it should take about 5 minutes per side to cook until medium.

Lay out two plates and add 1 cup baby arugula per plate. Top each arugula pile with steak, half the roasted radicchio and 1/4 cup blue cheese per plate.

Note: You could also grill the steak if you wanted but you want to make sure you have an eye on the roasting radicchio since it cooks up pretty quickly.
