Maple Doughnut Breakfast Sandwich

This doughnut breakfast sandwich combines homemade crispy doughnuts, eggs, bacon, cheese and lots of maple glaze. It’s the perfect way to start your totally sweet day. 

Ok, I get it. This is one of those recipes that probably never needed to be made. Totally over the top but totally insanely delicious at the same time. This recipe came about when I rolled my doughnuts too thin and after they were fried I realized they just wouldn’t work for my original thought (which was tres leche cake doughnut btw) so instead of remaking them I decided to try and make it work.

So I googled around to find ways to use my crispy doughnut rounds. At first I thought of doing some sort of doughnut frosting fondue but then I stumbled upon an article talking about the glazed donut breakfast sandwich from Dunkin Donuts. Now I’m not sure that this sandwich is still in existence but from what I read it was lacking in the flavor department.

So I threw caution to the wind and decided I would make myself a breakfast sandwich. A totally over the top sweet, crunchy and savory breakfast sandwich. Because I’m slightly OCD I used a biscuit cutter to size the egg and cheese. However, if your a normal human being I think just adding a someone close sized egg and cheese would work too. I also threw on bacon because bacon is amazing and I love it.

I also frosted the doughnuts on the inside so your hands stay clean while you’re inhaling this baby. For that first picture I maaaaaay have drizzled on a little more glaze than necessary. But is there really anything wrong with MORE maple glaze?

Maple Doughnut Breakfast Sandwich

This doughnut breakfast sandwich combines homemade crispy doughnuts, eggs, bacon, cheese and lots of maple glaze. It's the perfect way to start your totally sweet day.

Yield: 2 dozen donuts

Prep Time: 20 minutes

Cook Time: 60 minutes

Total Time: 80 minutes


For doughnuts:

  • 1 tablespoon vegetable shortening
  • 1/2 cup sugar
  • 1 egg yolk
  • 1-3/4 cup plus 2 tablespoons all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon apple pie spice
  • 1/2 cup whole milk

For glaze:

  • 3 tablespoons maple syrup
  • 1/2 teaspoon maple extract
  • 1/2-3/4 cup powdered sugar

For sandwich:

  • Fried egg
  • Crispy bacon
  • Sliced cheese


For doughnuts and sandwich:
In a large mixing bowl whisk together shortening, sugar and egg yolk, set aside.

In a medium sized bowl whisk together flour, baking powder, kosher salt and apple pie spice.

Alternately add flour and milk mixture to the shortening/sugar/yolk mixture. Mix together until the dough is combined. It will be pretty sticky.

Flour your hands and a clean surface (or large wooden cutting board) Bring the dough to the floured surface and knead for about 5 minutes. If the dough starts to stick to the kneading surface simply add more flour. Scrape up stuck dough with a bench knife/dough scraper.

One dough is smooth roll it out until it's 1/4 inch thick. Cut out doughnuts with a 3 inch doughnut cutter.

Once the doughnuts are ready start preparing the oil. Let the oil reach 365 degrees and start frying your doughnuts. Carefully place one doughnut in the hot oil and cook until underside is golden brown, flip and cook till the other side is browned.

Remove fried doughnut form the oil and place onto a paper towel lined plate.

Continue frying until all doughnuts are cooked. Remember to monitor your oil heat so that the doughnuts to not burn. Fry up holes at the end. (I tossed mine in a sugar cinnamon mixture)

Once all the doughnuts have been cooked dip their bottom in the maple glaze.

Prepare a fried egg and bacon. Lay a doughnut out (icing side up) and top with fried egg, bacon and cheese. Pop the sandwich under the broiler to melt the cheese. Top with another doughnut (icing side down) and devour.

For glaze:
Mix together until thick and just slightly runny. If it's too thin add more powdered sugar if it's too thick add a drop of milk.
