Mushroom Herb Goat Cheese Frittata

This mushroom herb goat cheese frittata is packed full of fresh grown AeroGarden herbs, Greek yogurt, tangy goat cheese and caramelized mushrooms. Hello breakfast!

If I had my way I would have a giant garden packed with fresh herbs. Have you ever seen Ina Gartens garden? I want that. I want giant rosemary bushes and basil that grows like wild flowers.

I would also like wild flowers that grow like wild flowers but I’m pretty sure I would kill them.

I’m so the worst at growing things. I even killed a cactus once.

A cactus! I always thought they were un-killable.

They are not.

BUT it looks like my luck just might be turning around. I was recently given an AeroGarden to grow some herbs just to prove how easy it really can be. I’m not gonna lie. I figured I would be the one to break it and zero herbs would grow.

Well, obviously that is not the case because as you can see from above I got myself a harvest!

I grew dill, parsley and basil and at first I was worried. Every single day I would peer down at my plants willing to see a little speck of life. Then all of a sudden one day they just started growing and it got crazy from there. They started sprouting leaves and growing tall. I think I was a little giddy at watching all my plants come to life.

I was also giddy at the fact that soon I would have all the fresh herbs I could want!

I harvested most of my herbs for this post and since they had just really started filling out. My husband was shocked to see that I cut them all down but it was necessary for optimal growing and the fact that I wanted a big herb packed frittata. I also couldn’t help but throw in some caramelized mushrooms, Greek yogurt and a TON of tangy goat cheese.

This frittata was delicious x100000000000000.

Mushroom Herb Goat Cheese Frittata

This mushroom herb goat cheese frittata is packed full of fresh grown AeroGarden herbs, Greek yogurt, tangy goat cheese and caramelized mushrooms. Hello breakfast!

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 9 large eggs
  • 1/3 cup Greek yogurt
  • 1/4 cup packed chopped herbs (I used dill, parsley and basil)
  • Pinch kosher salt
  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 1 clove garlic, minced
  • 4 ounces goat cheese

Directions:

Pre heat oven to 400 degrees.

In a large bowl whisk together eggs, greek yogurt, herbs and salt. Set aside.

In a 10 inch skillet let over medium high heat add olive oil. Once the oil is hot add in mushrooms and sauté until lightly browned and soft. Add in garlic and sauté for 30 seconds just until the garlic is fragrant.

Stir the egg mixture again (just to combine incase it settled slightly while sitting) and pour over the mushrooms in the skillet.

Quickly mix together the ingredients in the pan, smooth to make sure it's even in the pan and dot the top of the mixture with little pieces of the fresh goat cheese.

Once you see the sides starts to set remove from the top of the stove and place in the oven.

Bake for about 10 minutes or until the eggs are set in the middle.

Let rest for 5 minutes, slice and enjoy warm.
