Peppermint Pattie Brownie Bites

These super simple peppermint pattie brownie bites are the perfect combination of rich fudgy brownies and minty peppermint patties. Adorable and delicious!

I’m one of those people who love to go to the store and get everything they need. I’m not a fan of multiple stops. Especially around the holidays. I know, bah humbug. But seriously, around the holidays the stores are just too busy for me. That is why I was happy to accept the challenge to peruse Dollar General and get everything I needed for a simple dish from their one store.  

Was I successful? Yes! Look at those cute little brownie bites. They are full of peppermint flavor and a great two bite treat. Plus, they couldn’t be easier to make…who doesn’t love that? Oh, and even better, no extra stops. Everything I needed I easily found at Dollar General…hooray!

These little brownie bites start off with a super simple white whole wheat brownie that is jazzed up with the addition of a peppermint pattie and a sprinkling of crushed candy canes. This is the ultimate Christmas cookie.

Cook Time: 20 minutes

Total Time: 50 minutes

Ingredients:

  • 1/2 cup + 2 tablespoons unsalted butter
  • 1-1/4 cup white sugar
  • 3/4 cup (heaping) unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 1/4 - 1/2 teaspoon peppermint extract (this amount will depend on the strength of your
  • extract)
  • 2 large eggs
  • 1/2 cup white whole wheat flour
  • Miniature peppermint patties
  • 1/4 cup crushed peppermint candies or candy canes

Directions:

Preheat oven to 325 degrees and prepare a miniature brownie pan with paper liners.

In a medium sized saucepan add butter, sugar, cocoa powder and salt and melt together over medium heat. Do not let this boil, just melt the ingredients together. Take off the heat and let cool on the counter.

Once cool, stir in peppermint extract and then stir in eggs one at a time. Stir thoroughly between each egg addition. At this point the batter should look shiny and thick. Add in flour and stir until it's incorporated.

Add about 1 tablespoon batter into each paper liner. Bake for about 15 minutes until just almost done.

Pull them out of the oven and stick one miniature peppermint pattie into the top of the brownie. Pushing just slightly so it goes into the brownie. Sprinkle the top with crushed candy canes and let cool.
