Perfect Roast Potatoes

These perfect roast potatoes come out of the oven perfectly seasoned and perfectly crispy. I know that’s a lot of perfect for one sentence but these potatoes live up to their name!

Years ago my husband and I got rid of cable. The rates kept rising and I was not happy with paying over $100 a month for crappy television. So now the hubs and I live off whatever happens to be on online. However, the other day we finally bit the bullet and got a new internet tv service and now I’m so excited because we have a ton of new shows that we can binge! Which of course is exactly what we have been doing.

I’m totally obsessed with watching all the shows related to cooking. My husband and I have been watching Top Chef every. single. night. and I LOVE it! I remember watching it when we had cable and to be honest I missed it. Watching all this cooking it makes me want to cook even more than I already do. I mean I don’t have the unlimited budget (or skills) like these chefs BUT it’s still crazy motivating. Plus can we talk about Padma for a second? Good lord that woman is gorgeous! I need her job STAT!

So while I’m no Top Chef cook I do cook each and every day. Sometimes it’s fancy and sometimes it’s pure comfort. Today’s dish falls under the category of pure comfort. Potatoes and bread have always been my two favorite foods. When I was a kid I would fill up on those two items and always leave my meat sadly behind. Well, now that I’m an adult I have learned the art of balance because I’m not going to waste ANY of my food!

These perfect roast potatoes are perfectly buttery but have a soft pillow potato center. They are cooked in just a little ghee (clarified butter) and seasoned lightly with salt and pepper. Once you pull them out of the oven and go with my new favorite way – Marzetti® Veggie Drizzle™ Finishing Sauces . It’s a fun finishing sauce for vegetables that takes you from having plain veggies to jazzed up veggies. It comes in 4 different flavors but I opted for Garlic Parmesan for my potatoes because it personally sounded like a match made in heaven! Good news – it was! I also found Veggie Drizzle™ Finishing Sauces were a great way to add a ton of flavor to simply steamed vegetables. I buy a lot of those “steam in bag” vegetables and having an easy sauce to add flavor is a welcomed thing in my kitchen!

Perfect Roast Potatoes

Ingredients

  • 2 pounds small baby red potatoes halved
  • Water
  • 1-2 tablespoons ghee clarified butter
  • Kosher salt and black pepper to taste

Instructions

  • Preheat oven to 500 degrees F and line a rimmed baking sheet with foil.
  • In a large pan or pot add potatoes and add water just until it covers the potatoes.
  • Turn the stove to high and bring the potatoes to a boil. Boil for about 5 minutes or just until they are slightly tender but still a little difficult to get a fork through the potato. 
  • Strain potatoes and add to prepared baking sheet.
  • Toss with 1 tablespoon of ghee (let it melt over the hot potatoes and then stir) and season with the desired amount of kosher salt and pepper. If the potatoes do not seem evenly coated with ghee add a little more ghee. You don’t want the potatoes to be swimming in butter but you don’t want them to be dry. 
  • Roast for about 20 minutes until they are perfectly browned. Make sure to stir the potatoes once or twice during roasting. Also, the potatoes’ final cooking time will depend on their size. If you cut larger chunks they will take longer to cook. Make them super small and they will take less time.
