When I was a kid we used to go over my step-grandmothers house for Thanksgiving and there was more food than all of us combined could every actually eat. While everything was always delicious my two favorite sides dishes were cheesy potatoes and warm German potato salad. I know German potato salad isn’t a traditional Thanksgiving side dish but it weirdly was for us. I’m truthfully not even sure why considering we are not German.

I guess our family just does weird things. Who knows.

This potato dish is a play on my Thanksgiving German potato salad memories and it gives you all that tangy flavor you love BUT with the addition of lots of crispy bacon and tons of fresh herbs. To be honest the best thing about this recipe is that it’s easy to scale up or down if you’re just feeding yourself or the whole neighborhood.

Warm Bacon Herb Potato Salad

This warm bacon herb potato salad is the perfect winter side dish. It's the perfect balance of tangy and sweet and ready in just about 30 minutes. Made with soft potatoes, bacon, sautéed onions, garlic, fresh herbs and tossed in a tangy apple cider vinaigrette dressing.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

  • 1-1/2 pound whole baby yellow potatoes
  • 6 thick slices bacon, diced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1/3 cup apple cider vinagar
  • 2 teaspoons brown sugar (more if desired)
  • 2 teaspoons Dijon mustard
  • Kosher salt and pepper, to taste
  • 1 tablespoons chopped chives
  • 1/2 teaspoon fresh thyme leaves

Directions:

Add whole potatoes to a medium or large sized pot. Fill with water and place on the stove over high heat. Cook until the potatoes are fork tender but not fall apart. Drain and set aside to slightly cool.

In a large skillet set over medium heat add diced bacon and fry until crispy. Remove bacon from the pan and keep 1 tablespoon bacon grease in the pan.

Add in diced onions and saute until they start to become translucent. Add in garlic and cook just until fragrant - about 30 seconds. Remove from heat.

In a glass liquid measuring cup whisk together apple cider vinegar, brown sugar, Dijon mustard, kosher salt and pepper. Set aside.

Go back to your potatoes and slice them about 1/2 inch thick. The potatoes will likely be warm but just be careful and slice best you can.

Add sliced potatoes to the pan with onion and pour vinegar mixture over the potatoes and add in bacon, chives and thyme leaves. Gently toss the mixture so that the sauce can soak into the potatoes evenly and the herbs and bacon are distributed equally.

Taste mixture and add more kosher salt and pepper if desired. Serve warm from the skillet or room temperature.

Optional: Before serving sprinkle with green onions.

Note: These potatoes are meant to have a bit of a vinegar kick to them. If you want to bring in more sweetness up the brown sugar additions.

I love potato salad all year long! This recipe looks perfect - bacon!! Yup. The weather is still great for grilling here so I can see this recipe as a great side dish to brats or burgers.
