Spicy Pork Noodle Bowl

This spicy pork noodle bowl is packed full of flavor and ready in just 30 minutes. It’s a quick and easy meal that is sure to please you whole family! Spicy ground pork sautéed with Sichuan peppercorns and swimming in a delicious broth with baby bok choy and perfectly cooked noodles. 

There is a local dumpling and noodle bowl restaurant that I sometimes go to. I always get excited to order a giant bowl of spicy noodles but then I remember the downside. It’s messy. Like really messy. Plus I suck with chopsticks. Actually, I’m alright with chopsticks but still not the best. Usually I’m half slumped over the bowl all while slurping up the noodles and hoping the broth doesn’t get all over my shirt. I also take all the napkins they give me and stick them in my shirt like some sort of ghetto paper bib. I truly think that the greatest gift anyone could give me is an adult bib. I would rock the hell out of that.

I’m really not lying. I think I would wear an adult bib if I owned one. There is no shame in my saving my shirt game. Too many good shirts have been lost to food spillage. 

Since I made this at home I was able to eat it in just the manner I dream of – wearing an apron while sitting in with a fork. The apron is great because I can make a mess and literally not give a care in the world. I swear I basically have the eating habits of a toddler stuck in the body of a 34 year old woman.

In other words – I’m a hot hot mess.

Ok, so lets finally talk about this noodle bowl. I will start off by saying it’s a little spicy but I think that could easily be dialed down by cutting out the red pepper flakes and nixing the sriracha. But really the best part about this dish is that it’s ready in 30 minutes. I love simple suppers that are packed full of flavor and don’t take forever to cook.

Ohhhhh I almost forgot to tell you about the noodles. I used lo mein noodles for this dish because I like the way they hold up to the broth. They don’t soak up and get too soggy unlike other noodles. Also if you can’t find baby bok choy you can use kale, mustard greens or even regular bok choy as a substitute.

Spicy Pork Noodle Bowl

Ingredients:

  • 1 pound ground pork
  • 3 cloves garlic, minced
  • 3 teaspoons grated ginger
  • 2 teaspoons lemongrass paste
  • 1 teaspoon Sichuan peppercorns, crushed and chopped
  • 3/4 teaspoon red pepper flakes
  • 1/2 teaspoon cumin seeds, chopped
  • 1 tablespoon vegetable oil
  • Kosher salt, to taste
  • Black pepper, to taste
  • 6-8 cups chicken stock
  • 4 cups thinly sliced baby bok choy
  • 4 green onions, thinly sliced
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoon sriracha
  • 12 ounces lo mein noodles, cooked

Directions:

In a medium sized mixing bowl add ground pork, minced garlic, ginger, lemongrass, chopped Sichuan peppercorns, red pepper flakes and chopped cumin seeds. Mix together until well combined.

In a 5-6 quart pot (I used my Dutch oven) add vegetable oil and set over medium high heat. Once the oil is hot add in the ground pork and season with desired amount of kosher salt and black pepper. Cook until the pork in no longer pink. Breaking up the pork while it cooks.

Once the pork is fully cooked add in the chicken stock and simmer for about 10 minutes to help the flavors combine.

After it has simmered add in the baby bok choy, sliced onions, soy sauce, fish sauce and sriracha. Simmer for another 5 minutes or just until the bok choy is slightly softened.

Add cooked noodles to your bowl and pour the hot broth mixture overtop.
