I’m always dreaming up new summer cocktails and I think I just stumbled across a new favorite. Fresh watermelon, blueberries, mint, vodka, Truvia and a touch of fizzy water. How in the world could you not LOVE all that deliciousness? The best part is that this recipe makes a BIG pitcher so that means you can bring it out to the patio and enjoy a few cocktails with the hubs.

Or that means you just have more for yourself to drink alone on the patio.

Whatevs.

Oh wanna hear something totally off topic? I adopted a new cat. Yes, that means that I’m officially a crazy ass cat lady. This makes number 3 for our house. My husband says I’m not allowed to get anymore cats after this. Well, actually he “if you get one more cat I’m leaving you.”

Same thing…right?

You know how people gush over their new human babies? Well this is about to happen with my cat. Want to hear all about her? Of course you do.

Little Bennie “Benz” is 4lbs of adorableness and 1 year old. She is not growing anymore and is basically a forever kitten. Who has not always wanted one of those? I adapted him from North Carolina where my friend Jenni was fostering her. Jennie and I are friends on Facebook and I feel in love with little Benz via social media. So last week like a crazy person I drove down south and got myself a new kitty.

She is super sassy and takes no crap from my 2 other 12 pound kitties. Basically she is awesome.

Ok, back to the cocktail. Here is what you should do.

Make it for Memorial Day.

Drink it on Memorial Day.

Watermelon Blueberry Mint Spritzer

This watermelon blueberry mint spritzer is the perfect Memorial Day cocktail. Fruity watermelon mixed with fresh mint, blueberries and a touch of Truvia.

Cook Time: 0 minutes

Total Time: 20 minutes

Ingredients:

  • 1 pound cubed seedless watermelon
  • 1-2 tablespoons zero calorie Truvia sweetener
  • 1-1/2 cup vodka
  • 1-1/2 cup fresh blueberries
  • 3/4 cup mint leaves
  • 1/4 cup lime juice
  • 1 liter seltzer water

Directions:

In a blender add watermelon and puree until smooth.

Line a strainer with cheesecloth and pour puree through the strainer to remove the pulp from the puree.

Stir truvia into the watermelon mixture and set aside.

In a large pitcher add vodka, blueberries, mint leaves and lime juice. Lightly muddle just to release the flavor of the mint.

Pour in the watermelon mixture and stir to combine.

Pour in half the bottle of seltzer, taste and add more seltzer if desired.
