This roast pork loin with dried fruit compote is an easy and flavorful dinner recipe that your whole family will love. Serve with rice, buttered noodles or even mashed potatoes. On a baking sheet add your pork loin roast and season liberally with kosher salt and black pepper.
Bake until the center of the pork roast reaches 140 degrees F. Pull it out of the oven and let it rest for about 5 minutes where the center of the roast should reach 145 degrees F.
While the roast cooks in a small saucepan add chopped dates, apricots, golden raisins, orange juice, and garlic. Simmer on low until the dried fruit becomes plump and most of the liquid has cooked away. Do not brown your fruit, you're just looking to create a soft spoonable compote.
Remove the compote from the stove and stir in the cilantro.
After your pork has rest, slice the pork and serve with the dried fruit compote.
