Parmesan Prosciutto Scones

These parmesan prosciutto scones are packed full shredded parmesan, prosciutto, chives and lots of delicious butter. They are perfect for Christmas morning!

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • 4 tablespoons unsalted cold butter cut into cubes
  • 1 cup shredded Parmesan cheese more for topping
  • 1 cup chopped prosciutto sliced 1/4 inch thick
  • 1/4 cup diced chives
  • 3/4 cup - 1 cup heavy cream more for topping

Instructions

  • Preheat oven to 425 degrees and line a baking sheet with a Silpat liner or parchment paper.
  • In a large mixing bowl add flour, baking powder, and sugar. Whisk to combine.
  • Add cold butter to the flour mixture and using a pastry blender mix into the flour until the flour is crumbly with little pieces of butter still present in the dough.
  • Stir in Parmesan cheese, prosciutto, and chives.
  • Add in 3/4 cup heavy cream and stir to combine.
  • If the mixture doesn't fully come together add in a bit more cream until the dough fully comes together and is a bit sticky.
  • Flour a large cutting board or your counter and turn out the dough.
  • Flour your hands and form the dough into a 6-inch disk and about 3/4 inch thick.
  • Cut into 8 pieces and place onto the prepared baking sheet.
  • Brush the tops of the scones with additional heavy cream.
  • Place into the oven and cook for 20-25 minutes or until golden brown.
  • After 15 minutes remove from the oven, top with a small handful of shredded Parmesan cheese, and add back to the oven.
  • Continue baking until completely baked.
  • Serve warm with lots of delicious butter.
