These parmesan prosciutto scones are packed full shredded parmesan, prosciutto, chives and lots of delicious butter. They are perfect for Christmas morning!
In a large mixing bowl add flour, baking powder, and sugar. Whisk to combine.
Add cold butter to the flour mixture and using a pastry blender mix into the flour until the flour is crumbly with little pieces of butter still present in the dough.
Stir in Parmesan cheese, prosciutto, and chives.
Add in 3/4 cup heavy cream and stir to combine.
If the mixture doesn't fully come together add in a bit more cream until the dough fully comes together and is a bit sticky.
Flour a large cutting board or your counter and turn out the dough.
Flour your hands and form the dough into a 6-inch disk and about 3/4 inch thick.
Cut into 8 pieces and place onto the prepared baking sheet.
Brush the tops of the scones with additional heavy cream.
Place into the oven and cook for 20-25 minutes or until golden brown.
After 15 minutes remove from the oven, top with a small handful of shredded Parmesan cheese, and add back to the oven.
