These oatmeal stuffed breakfast baked apples are a delicious and comforting way to start the day. Filled with old fashioned oats, dried fruit, toasted nuts, and just a touch of sweetness.

Ingredients
4
large granny smith apples
1
cup
old fashioned oats
1/4
cup
all-purpose flour
1/4
cup
dark brown sugar
1/4
cup
chopped dried cranberries
1/4
cup
chopped toasted pecans
4
tablespoons
butter
frozen, diced
1
teaspoon
ground cinnamon
Instructions
Preheat oven to 350 degrees F and spray an 8x8 baking dish with non-stick cooking spray.
Cut the top off each apple and scoop out the core. I find it easiest to use a melon baller or a smaller spoon.
In a small bowl combine oats, flour, brown sugar, dried cranberries, pecans, butter, and cinnamon.
Add apples to the prepared pan.
Divide the oat mixture between the 4 apples and stuff the centers of the apples.
Bake, uncovered, for 25-30 minutes, or until the apples have softened slightly and the oat mixture is starting to brown.
Serve warm with a drizzle of maple syrup, a dollop of whipped cream, or a side of yogurt.
