- 2 pounds shredded rotissorie chicken
- 1 cup quartered red grapes
- 1 cup small diced Fuji apple
- 1 cup small diced celery about 2 stalks
- 1/4 cup minced shallots
- 1 cup mayonnaise
- 3 tablespoons lemon juice
- 2 tablespoons minced fresh parsley
- 2 tablespoons minced fresh chives
- 1 tablespoon Dijon mustard
- Kosher salt to taste
- Black pepper to taste
Add chicken, grapes, apples, celery, and shallots to a large mixing bowl.
In a small mixing bowl add mayonnaise, lemon juice, parsley, chives, and Dijon mustard.
Whisk to combine.
Pour mayonnaise mixture over chicken mixture and stir to combine.
Taste and season with kosher salt and black pepper.
Store in the refrigerator and serve plain, on bread, in a wrap, or on lettuce wraps.
