My personal favorite chicken for chicken salad is pulled rotisserie chicken. It’s juicy and tender and really hits the mark in the flavor department.
Stores like Costco and Walmart sell containers of pulled rotisserie chicken in the store, making it easy to use if you don’t want to shred your own.
My next favorite chicken option is to roast whole breasts and shred them by hand. I used that method for my chicken and chard tortilla soup.
If you don’t have the time or energy to shred by hand (or can’t find pre-shredded rotisserie chicken), canned and drained chicken breast is always a great option.

What type of apple should I use?
I like to use a crisp red apple, so I usually choose a Fuji apple, which is easy to find and available year-round.

Ingredients
- 2 pounds shredded rotissorie chicken
- 1 cup quartered red grapes
- 1 cup small diced Fuji apple
- 1 cup small diced celery, about 2 stalks
- 1/4 cup minced shallots
- 1 cup mayonnaise
- 3 tablespoons lemon juice
- 2 tablespoons minced fresh parsley
- 2 tablespoons minced fresh chives
- 1 tablespoon Dijon mustard
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Add chicken, grapes, apples, celery, and shallots to a large mixing bowl.
- In a small mixing bowl add mayonnaise, lemon juice, parsley, chives, and Dijon mustard.
- Whisk to combine.
- Pour mayonnaise mixture over chicken mixture and stir to combine.
