8 ounces mascarpone cheese 1/3 cup diced strawberries 2 tablespoons powdered sugar 1 teaspoon vanilla bean paste 4 thick slices challah bread 4 tablespoons unsalted butter Whipped cream optional Powdered sugar optional
In a medium sized mixing bowl stir together mascarpone cheese, diced strawberries, powdered sugar, and vanilla bean paste.
Lay out challah bread and spread 1 tablespoon butter on one side of each slice of bread.
Flip two slices over and spread half of the mascarpone mixture on each slice of bread. Top with other half of bread, butter side up.
Add to a large skillet or griddle set over medium heat.
Heat until the underside is golden brown, flip and cook the other side till golden brown.
Add to a large plate and top with whipped cream and powdered sugar.
