Easy Whipped Chocolate Frosting

Ingredients

  • 2 sticks 1 cup unsalted butter, room temperature
  • 2 tablespoons cold heavy whipping cream more may be needed
  • 1/2 cup melted bittersweet chocolate cooled but still liquid
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon instant espresso powder
  • 1/4 teaspoons kosher salt
  • 2 cups powdered sugar more may be needed

Instructions

  • In a stand mixer add butter and heavy whipping cream. Beat for about 3 minutes until fluffy. At about the 1.5 minute mark scrape down the sides.
  • Stir in melted chocolate, cocoa powder, instant espresso powder and kosher salt. Mix on low speed just to incorporate.
  • Add in the powdered sugar 1 cup at a time, incorporating each cup slowly. (You're doing this so that there is not a giant powdered sugar explosion when you go to speed up the mixer.)
  • Slowly turn on the mixer and whip for about 5 minutes or until the frosting is light and fluffy.
  • If the frosting is too thick add more heavy cream until desired consistency is met, if it's too thin add more powdered sugar until desired consistency is met.
