- 2 sticks 1 cup unsalted butter, room temperature
- 2 tablespoons cold heavy whipping cream more may be needed
- 1/2 cup melted bittersweet chocolate cooled but still liquid
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon instant espresso powder
- 1/4 teaspoons kosher salt
- 2 cups powdered sugar more may be needed
In a stand mixer add butter and heavy whipping cream. Beat for about 3 minutes until fluffy. At about the 1.5 minute mark scrape down the sides.
Stir in melted chocolate, cocoa powder, instant espresso powder and kosher salt. Mix on low speed just to incorporate.
Add in the powdered sugar 1 cup at a time, incorporating each cup slowly. (You're doing this so that there is not a giant powdered sugar explosion when you go to speed up the mixer.)
Slowly turn on the mixer and whip for about 5 minutes or until the frosting is light and fluffy.
If the frosting is too thick add more heavy cream until desired consistency is met, if it's too thin add more powdered sugar until desired consistency is met.
