Prevent your screen from going dark
For salad:
- 4 large grilled corn on the cob
- 5 small radishes cut into thin slices and then in half
- 1 small ripe avocado
- 1/4 cup chopped cilantro
- 1/4 cup small diced red onion
- 1/4 cup of crumbled cotija cheese
For dressing:
- 1/2 cup mayonnaise
- 1 lime juiced
- 1 tablespoon chipotle sauce
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
For salad:
Remove kernels off of all ears of corn and place them in a large bowl.
Add the radishes, avocado, cilantro, red onion, and Cotija cheese and toss to combine.
Pour in the dressing and toss to combine.
Taste and season with kosher salt and black pepper if needed.
Serve and enjoy!
For dressing:
In a small bowl add the mayonnaise, juice of 1 lime, chipotle sauce, paprika, and chili powder. Mix well until combined.
