Need the perfect summer salad? Look no further than this cucumber tomato salad! Packed full of summer tomatoes, crunchy cucumbers, red onion, and a light red wine vinegar dressing.

Ingredients

  • 1 pound mini cucumbers thinly sliced
  • 1 small red onion thinly sliced
  • 2 large heirloom tomatoes diced
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Kosher salt to taste
  • Black pepper to taste

Instructions

  • In a large bowl add all the ingredients and toss to combine.
  • Taste, and season with the desired amount of kosher salt and black pepper.
  • Let sit for at least 1 hour before serving.
