Preheat your oven to 350 degrees F and spray a 9x5 loaf pan with non-stick cooking spray.
In a large-sized mixing bowl whisk together flour, pumpkin pie spice, cinnamon, baking soda, kosher salt, and baking powder.
In a medium-sized mixing bowl whisk together eggs, pumpkin puree, brown sugar, vegetable oil, granulated sugar, vanilla extract, and maple extract.
Pour the wet ingredients into the dry ingredients and mix until well combined and you no longer see any flour.
Add the bread mixture to the prepared baking pan and top with pepitas.
Bake for roughly 60 minutes or until the center of the bread comes out clean when tested with a toothpick, or when tested with an instant-read thermometer it has reached 200-205 degrees F.
Check your bread around the 45-minute mark to make sure the nuts are not burning. If so lightly tent with foil.
Let the bread cool on a cooling rack for 20 minutes, remove it from the pan, and let it fully cool.
