This tuna white bean salad is packed full of fresh lemon, herbs, and cannellini beans. It's great served on toasted bread or while eating straight from the bowl.

Ingredients

(5 ounce)
can albacore tuna
in olive oil, drained
1
(14 ounce)
can cannellini beans
drained and rinsed
1/2
lemon
zested and juiced
1/4
cup
diced fine red onion
2
tablespoons
minced fresh dill
2
tablespoons
minced fresh parsley
1/4
teaspoon
Kosher salt
to taste
1/4
teaspoon
black pepper
to taste
Toasted bread
optional
Instructions
In a medium sized mixing bowl add all the ingredients and lightly stir to combine.
Taste the mixture and add more herbs, lemon, or seasoning if needed. If the salad seems dry drizzle in some extra virgin olive oil.
Serve on bread if desired.
Notes
This recipe is highly customizable so you can always add more herbs, lemon, or even a few drizzles of extra olive oil.
