This shrimp feta pasta is a flavor-packed weeknight or special occasion meal. Garlicky shrimp mixed with a feta sherry tomato sauce served over perfectly cooked pasta - what's not to love?
2poundsmedium raw shrimpcleaned, deveined and shelled
1poundcooked linguine
Instructions
In a large skillet set over medium heat add 4 tablespoons unsalted butter.
When the butter is melted add the diced onion and parsley. Cook for about 5 minutes or until the onions are translucent.
Add the tomatoes, Italian spice blend, crushed red pepper, and kosher salt. Lower the heat and let simmer for 20 minutes.
Add the sherry and simmer for another 10 minutes. After 10 minutes stir in 3/4 cup feta cheese and keep warm while you prepare the shrimp.
In another large pan set over medium heat add the remaining 4 tablespoons butter. When the butter is melted add the minced garlic and shrimp. Cook just until the shrimp is pink and combine the shrimp, butter, and garlic to the sauce. Stir to combine.
Serve the sauce over cooked pasta and garnish with remaining feta cheese.
