BBQ Chicken Burger with Peach Corn Salsa
This BBQ chicken burger with peach corn salsa is the perfect summer burger. Ground chicken mixed with spices and bbq sauce all cooked up to perfection, served on Texas toast and topped with sweet and savory peach corn salsa, cotija cheese and crispy fried onions.

For salsa:
- 2 tablespoons unsalted butter
- 2 cups sweet corn kernels
- 2 whole peaches pitted and diced small
- 1/4 cup chopped cilantro
- 1/2 fresh lime juiced
- ¼ teaspoon kosher salt
For burgers:
In a large bowl, mix together ground chicken, cilantro, BBQ sauce, smoked paprika, chili powder, and kosher salt and form into 4 equal-sized patties.
Set a large non-stick pan over medium heat and add in 2 teaspoons olive oil. Once the oil is hot add in the patties and fry until bottom is brown, flip and continue cooking until the patties are fully cooked. The inside of the burger should be at least 165 degrees F.
Toast the Texas toast according to box directions, top with chicken burger, salsa, cotija cheese an crunchy fried onions.
For salsa:
In a large skillet set over medium high heat add butter. Once the butter is melted and hot add in the sweet corn and saute for about 5 minutes until it starts to soften. Add in peaches and continue cooking just until the peaches soften.
Remove from the heat and toss in cilantro, lime juice, and kosher salt.
