BBQ Glazed Meatloaf

This BBQ glazed meatloaf uses juicy ground beef and is full of flavor with Italian seasoning, glazed with a sweet and savory BBQ sauce.

Ingredients

For meatloaf:

  • ½ cup milk
  • 2 large eggs
  • 1 cup dried bread crumbs
  • ½ cup finely diced onion
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon kosher salt
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes
  • 2 pounds ground beef

For BBQ glaze:

  • ¼ cup BBQ sauce
  • 2 tablespoons ketchup
  • 2 tablespoons light brown sugar
  • ½ teaspoon Worcestershire sauce

Instructions

For meatloaf

  • Preheat the oven to 375 degrees F and lightly grease a 9x5 loaf pan with olive oil spray. 
  • In a large bowl, whisk together the milk and eggs. Add the bread crumbs and mix to combine. 
  • Add the onion, garlic, parsley, salt, Italian seasoning, black pepper, paprika, and red pepper flakes. Mix to combine. 
  • Add the ground beef and gently mix to combine. You don’t want to compact the meat or you’ll end up with a tough meatloaf. 
  • Once combined, transfer the meat mixture to the prepared loaf pan and gently press the top into a smooth layer. 
  • Bake the meatloaf for 30 minutes. 
  • Spread the glaze over the meatloaf and bake for an additional 20 minutes. 
  • Allow the meatloaf to rest in the pan for 10 minutes. Then remove it to a board and slice it into 1-inch pieces. 
  • Serve with your desired sides and enjoy. Store any leftovers in an airtight container in the fridge for up to three days. 

For BBQ glaze 

  • Stir together BBQ sauce, ketchup, brown sugar, and Worcestershire sauce in a small bowl.
