Brown Sugar Orange Macaroons

These brown sugar orange macaroons are the perfect coconut cookie treat. They are fresh, zesty and perfect sweet.

Ingredients

  • ½ cup unsalted butter room temperature
  • ¾ cup brown sugar packed
  • ¼ teaspoon kosher salt
  • 1 tablespoon finely grated orange peel
  • 3 large eggs
  • 24 ounces sweetened flaked coconut

Instructions

  • Preheat your oven to 325 degrees F. Make sure the oven racks are in the middle of the oven. Line 3 large rimmed baking sheet pans with parchment paper or a silicone liner.
  • Using an electric mixer, beat butter in a large bowl until smooth.
  • Add brown sugar and salt and beat until blended and creamy, about 3 minutes. Whip down the sides of the bowl.
  • Mix in orange peel until combined, and mix in the eggs, one at a time.
  • Fold in coconut.
  • Using a 1-½ tablespoon cookie scoop, drop batter onto the prepared baking sheets, spacing 1-½ inches apart.
  • Bake macaroons, 1 sheet at a time, until golden on the bottom and browned in spots, 25 to 30 minutes.
  • Cool completely on sheets.
