Servings: 6 servings
- 1 pound thick sliced bacon diced
- 2 (11 ounce) cans sweet corn drained
- 4 green onions ends trimmed, white and green part thinly sliced but separated
- 1/4 cup roughly chopped pickled jalapeno
- 8 ounces cream cheese
- 2 tablespoons whole milk
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon Black pepper
Set a 12-inch skillet over medium-high heat and add bacon. Cook until the bacon is crispy and browned. Remove bacon from the pan to a paper towel lined plate.
Remove the bacon grease from the pan, reserving 1 tablespoon of bacon grease.
Add the skillet back to the stove and add drained corn, white part of the green onion, and jalapeno. Cook just until the onion has started to soften.
Turn heat to low, add in cream cheese and milk and stir to combine. The cream cheese may take a second to soften but just keep stirring until it's smooth.
Remove from the heat and stir in the green part of the onion and crispy bacon. Stir to combine, taste, and season with kosher salt and black pepper. If the dish is salty enough you can opt to leave the kosher salt out of the recipe.
Serve warm with corn chips, pita chips, or vegetable sticks.
