Creamy Horseradish Cucumber Salad

This creamy horseradish cucumber salad is a delicious twist to the classic cucumber salad. Made with freshly sliced cucumbers, red onion, sour cream, seasoned rice vinegar, fresh dill, and spicy grated horseradish. It's the perfect summer side salad!

Ingredients

  • 1/4 cup sour cream
  • 2 tablespoons seasoned rice wine vinegar
  • 2 tablespoons hot grated horseradish
  • 1 tablespoons minced fresh dill
  • 1 pound sliced Persian cucumbers
  • 1 small red onion thinly sliced
  • Kosher salt to taste
  • Black pepper to taste

Instructions

  • In a medium-sized mixing bowl add sour cream, seasoned rice vinegar, grated horseradish, and fresh dill.
  • Stir or whisk to combine.
  • Add in sliced cucumbers and sliced red onion and stir until fully combined.
  • Taste and season with the desired amount of kosher salt and black pepper.
  • Cover and refrigerate for at least 2 hours to help the flavors come together and to loosen up the sauce.
  • Stir once more before serving.
