These easy carrot fritters are packed full of flavor with the addition of cilantro, shallots, and garlic. They make a great side dish and an even easier appetizer. Serve plain or with my delicious Greek yogurt cilantro lime sauce!
Set aside carrots and if they give off any moisture make sure to drain it off.
In a medium-sized mixing bowl add egg and whisk.
Add in 2 tablespoons cilantro, shallots, garlic, kosher salt, black pepper, and flour.
Whisk until combined.
Stir in grated carrots.
Add vegetable to a 12-inch skillet and set over medium-high heat.
When the oil is hot add 2 tablespoons sized scoops of the carrot mixture into the oil and flatten slightly. Continue until the pan is full. I like to cook 4-5 at a time.
When the bottom is golden brown flip the fritter and continue cooking until the other side is browned.
Remove from the skillet when fully cooked and place onto a paper towel lined plate.
Continue until all the fritters have been cooked.
In a small bowl whisk together Greek yogurt, cilantro, and lime juice.
Serve fritters with Greek yogurt dipping sauce.
Notes
If the carrots give off a lot of moisture and the mixture gets runny you can add in a little more flour to hold it together.
