Mediterranean Tuna Orzo Salad
This Mediterranean tuna orzo salad is a great quick and easy weeknight meal. Protein-packed tuna and orzo pasta mixed with lemon, capers, artichoke hearts, sundried tomatoes, and lots of fresh herbs.

- 8 ounces orzo pasta
- 2 5 ounce cans albacore tuna in olive oil
- 1 3 ounce jar capers, drained
- 1 lemon zested
- 1 lemon juiced
- 1 small shallot minced
- 1/3 cup crumbled feta cheese
- 1/3 cup finely chopped sundried tomatoes
- 1/3 cup finely chopped artichoke hearts
- 1/4 cup minced fresh parsley
- 2 tablespoons minced fresh dill
- Kosher salt to taste
- Black pepper to taste
Cook the pasta according to the box directions until the pasta is al dente.
Drain and let cool while you prepare the tuna salad.
In a large mixing bowl add tuna with the oil, drained capers, lemon zest, lemon juice, shallot, crumbled feta cheese, sundried tomatoes, artichoke hearts, parsley, and dill. Stir to combine.
Add the pasta to the tuna mixture and stir to combine.
Taste and season with kosher salt and black pepper. If the pasta salad looks dry drizzle in a little more olive oil and stirs to combine.
