Molasses Bacon Baked Beans

- 16 strips bacon divided
- 1 small sweet onion diced
- 4 cloves garlic minced
- 4 14.5 ounce cans navy beans, drained and rinsed
- 1/2 cup molasses
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 1/4 cup bourbon
- 3 tablespoons apple butter
- 2 teaspoons country Dijon mustard
Preheat oven to 350 degrees F.
Dice 8 strips of the bacon and add to a 12-inch high-sided skillet pan.
Set over medium-high heat and cook until the bacon is crisp.
Remove the bacon from the pan and set it on a paper towel-lined plate.
Remove all but 1 tablespoon of the bacon grease from the pan.
Add onions to the pan and sauté until translucent and soft.
Add in the garlic and cook for another 30 seconds.
Stir in beans, molasses, maple syrup, brown sugar, bourbon, apple butter, and Dijon mustard.
Mix to combine and let the mixture warm through just until it starts to bubble.
Remove from the heat, smooth out the top, and place the remaining strips of bacon on top of the beans.
Bake for 45 minutes.
Turn the broiler on and broil the top of the beans just until the bacon is crisp.
Serve hot.
