Ingredients

  • 2 tablespoons olive oil
  • 1 whole green bell pepper cored and thinly sliced
  • ½ small yellow onion thinly sliced
  • ¼ teaspoon Italian seasoning
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 clove garlic minced
  • 4 large slices white bread
  • 2 tablespoons unsalted butter
  • ½ pound deli shaved rare roast beef
  • 4 slices provolone cheese

Instructions

  • In a 12-inch skillet add olive oil and set over medium-high heat.
  • When the oil is hot, add sliced green bell peppers, yellow onion, Italian seasoning, kosher salt, and black pepper.
  • Saute until the vegetables start to soften and the onion starts to look translucent about 10 minutes. Add in the garlic and saute for a minute longer. Remove the pan from the heat.
  • Preheat your panini press to medium.
  • Butter one side of your bread slices. On the unbuttered side of two slices of bread, start layering your sandwiches: one slice of cheese, half of the pepper/onion mixture, half of the roast beef, another slice of cheese, and the other side of bread, buttered side out.
  • Place in panini press, close the lid, and press until the bread is toasted, the inside of the sandwich is warm and the cheese is melted, about 5 minutes.
